LONGBRANCH Blender Gazpacho

2 c LONGBRANCH Bloody Mary Zinger
1 c peeled, seeded & chopped tomatoes
½ c finely chopped green pepper
½ c finely chopped celery
½ c finely chopped onion
2 Tb cilantro
1 clove garlic, minced
2-3 Tb wine vinegar
1 Tb olive oil
1 tsp salt
¼ tsp freshly ground pepper
Thin slices of avocado
1 lime, cut into wedges
Additional cilantro

Combine all ingredients except avocado, lime wedges and additional cilantro in a blender jar.  Pulse until well blended.  Garnish each serving with a slice of avocado, a wedge of lime and a sprig of cilantro.
Makes 4 servings.
